Italian food is one of my absolutely favorite foods and i am always exploring different ways to make pasta.
Today i will share with you how to make my creamy veggie chicken pasta .
Ingredients:
Serving 2-4 People
- Lemon 1 Or 2
- Thin Sliced Chicken Breast 2 Or 4
- Broccoli 1 cup or 2 cup
- Asparagus handful
- Zucchini 1 Or 2
- Roma Tomatoes 2 or 4
- Italian seasoning 1 TBSP
- Parmesan Cheese 1/4 cup
- Italian Shredded Cheese Mix 1/4 cup
- Butter 2 or 4 TBSP
- Garlic Powder
- Salt & Pepper
- Basil 2 Leaves Or 1 TBSP Dry
- Spagetti 6 or 12 oz
- Cream Cheese 2 Or 6 TBSP
- Olive oil
Steps :
- Pre-heat the oven to BAKE 425 degrees
- Wash all your fresh produce Tomatoes, zucchini, basil, asparagus, broccoli
- Cut your lemon in half
- Cut all veggies including asparagus , broccoli, zucchini
- Cut your tomatoes into thick wedges
- Toss all your veggies in olive oil, salt , pepper , garlic powder
- Spread all veggies on foil ( might need to spread onto two oven pans ) and place them on the top rack of your oven. ( 25-30 minutes)
- Prep your thin sliced chicken breast by coating it with olive oil, italian seasoning ( if you dont have italian seasoning at home use oregano, rosemary , thyme ) + add salt, pepper , garlic powder. Place on the middle rack of your oven. ( 25-30 minutes)
- Bring a pot of water with salt and oil to boil + add your spaghetti ( depending on how many people your serving you be the judge of amount ) + cook 15 min or until desired texture depending on serving size
- Reserve 1/2 cup pasta cooking water
- Drain spaghetti and set aside
- Using the same spaghetti pot….add butter + lemon juice using half the lemon + cream cheese on medium heat for 1 min.
- Stir in spaghetti + add parmesan + italian mix shredded cheese + add the reserved pasta water + lemon juice if needed using the other half
- Once your chicken is ready cut into thin slices and add it to your pasta
- Once veggies are ready ( you can broil veggies at the end for 3-5 min to get a slight crisp ) add them to your pasta
- Sprinkle your basil wether fresh or dry and …
