Blueberry Quick Bread Recipe

Do you have wrinkled blueberries in your fridge that no one wants to eat?

Lets use the wrinkled blueberries to make a delicious blueberry bread that your entire family would enjoy.

Ingredients Needed:

  • 1 cup fresh blueberries     
  • 1/2 cup maple syrup
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/3 cup  vegetable oil or coconut oil
  • 1   1/2 cups all purpose flower ( if you only have bread flower, Gluten free flour, or wheat pastry flour for example go ahead and use what you have )
  • 1   1/2 tsp baking soda
  • 1 tsp of cinnamon
  • 1/2 tsp salt
  • Brown sugar 3 tbsp ( to sprinkle on the blueberry bread batter )
  • Optional: add 2 tbsp walnuts to the top of the batter

Instructions :

  • Preheat oven to 350 degrees
  • Grease your 9×5 inch bread pan
  • In a large mixing bowl stir the oil, eggs , vanilla extract, maple syrup until combined. Add the flour, cinnamon, salt, baking powder mix until combined
  • Fold in the fresh blueberries
  • Pour the batter into your greased pan
  • Top the batter with a handful of fresh blueberries
  • Sprinkle the brown sugar evenly on top
  • Optional : add crushed walnuts on top
  • Place on the middle rack of your oven
  • Bake for 60 minutes ( every oven is different so keep an eye out every 20 minutes)
  • Let the bread cool for at least 30 minutes before cutting into it

Add butter to your warm slice of Blueberry Bread and ENJOY!
